On days when we're trying to get out the door as quickly as possible, fast (but healthy) breakfasts are such a game changer! I love this simple recipe, and it's easy enough for the kids to help make, as well! All you need is greek yogurt, maple syrup, granola, and some fresh fruit:
I mixed about four tablespoons of maple syrup into two cups of greek yogurt...maybe a bit more, since greek yogurt is so tart. Then I spread it on my favorite silicone baking sheet (you can just use parchment paper on a baking sheet, too).
Top it with the granola and fruit - I used blueberries and strawberries, and added the leftover berry juice just to see how the color looked with the yogurt :).
Place it in the freezer for at least two hours, then break into whatever size pieces you want!
